I was thinking about starting a thread like this! I adore baking and cooking. I have tons of recipes at home that I make all the time... I must search for them
Here's my first recipe I'll share for Orange Pumpkin Muffins <3 .
1 3/4 cups flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup packed brown sugar
2 eggs
1/3 cup vegetable oil
1 cup canned pumpkin
1/3 cup orange juice
1 teaspoon grated orange zest (Don't leave this out. It makes a difference in the whole orange flavor)
1. Mix flour and spices in small bowl. (no need to sift. Just blend with a whisk)
2. In large bowlmix sugars,eggs and oil.
3. Add pumpkin (mix well so there are no pumpkin lumps), orange juice and zest,beat until well blended .
4. Stir in dry ingredients just until moistened.
5. Fill paper lined muffin cups 2/3 full.
6. Bake 20-23 minutes at 350 degrees. (start with 15 minutes, and then increase time, to ensure you don't overcook them)
7. Cool.
I also have a teeny request (I know this isn't a request thread, but...). If anyone has a really good egg curry recipe, please PM me. Ever since I've had that at a friend's house, I've been wanting to try my hand at cooking something like that.
