I was thinking about starting a thread like this! I adore baking and cooking. ::squee:: I have tons of recipes at home that I make all the time... I must search for them

Here's my first recipe I'll share for Orange Pumpkin Muffins <3 .

1 3/4 cups flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup packed brown sugar
2 eggs
1/3 cup vegetable oil
1 cup canned pumpkin
1/3 cup orange juice
1 teaspoon grated orange zest (Don't leave this out. It makes a difference in the whole orange flavor)

1. Mix flour and spices in small bowl. (no need to sift. Just blend with a whisk)
2. In large bowlmix sugars,eggs and oil.
3. Add pumpkin (mix well so there are no pumpkin lumps), orange juice and zest,beat until well blended .
4. Stir in dry ingredients just until moistened.
5. Fill paper lined muffin cups 2/3 full.
6. Bake 20-23 minutes at 350 degrees. (start with 15 minutes, and then increase time, to ensure you don't overcook them)
7. Cool.

I also have a teeny request (I know this isn't a request thread, but...). If anyone has a really good egg curry recipe, please PM me. Ever since I've had that at a friend's house, I've been wanting to try my hand at cooking something like that.

@__@ My music teacher has this HEAVENLY recipe for gingerbread cookies.... but it's a family recipe. So a couple of my classmates were jokingly plotting to marry into her family by means of her hott, musically talented and all-round nice guy son who's our age. XD

@ Reve Rouge: That sounds like a damn tasty recipe....

It's heavenly. You can add nuts too, but I think they just get in the way of the orangey-pumpkinny goodness. ::squee:: And since it's the fall (at least where I am), it's a good time of year to make them.

I have yet another pumpkin related recipe for cookies that I will also post this weekend when I go home. <3 pumpkins. :grin:

Okay, you asked for it! ^^;;

First off, you want to put some pasta noodles on to boil- I'd suggest a box of macaroni and cheese.

Next, cook up a pound of ground beef (if you're a veggie just skip this step ;) ) add a dash of cinnimon to the ground beef.

Once you've got the meat cooked, set it aside...

Here comes the weird part XD-

Mix a half cup of milk, the packet of cheese (if you made the macaroni) and a half cup of shredded cheese. heat it up- either on the stove or in a microwave- until the cheese has melted and add in a teaspoon of cinnimon and 1/4 a cut of melted chocolate. Mix well.

Once the noodles are ready, strain them and add the meat, mix the meat in, and add in the interesting cheese concoction.

Mix well and enjoy!~

I said it was weird, didn't I? Made it myself, and it is so yummy :3

Being that we've got so many Mana fans here, I think it's only right that I post a curry recipe ::k::
Courtesy of "The New York Times' More 60-Minute Gourmet"

Ingredients
- 1 3/4 pounds boneless chicken breasts (I just use however much I feel like eating)
- 2 tbsp butter
- Salt and freshly ground pepper (I don't bother)
- 1/4 cup finely chopped shallots (ditto)
- 1 tbsp or more curry powder
- 1/2 cup dry white wine
- 1 1/4 cups heavy cream

1. Cut the chicken up into pieces.
2. Melt the butter in a skillet, and when it is quite hot but now brown, add the chicken pieces. Sprinkle with salt and pepper to taste. Stir often unti lthe chicken pieces lose their raw look - about 2 minutes.
3. Sprinkle the chicken with the shallots and curry powder. Stir well to blend and cook about 1 minute.
4. Transfer the chicken pieces to a bowl.
5. Add the wine to the skillet and cook over high heat about 3 minutes or until it is reduced to 1/4 cup. Add any juices that have accumulated in the bowl containing the chicken.
6. Add the cream to the skillet and cook over high heat about 4 minutes. Add the chicken and stir to blend well.

Easy as that! The results:

I'm not much of a cook but I can usually make simple/basic things. I make a lot of soups though but those are easy. Chop up whatever veggies I want in it, cut up whatever meat and let it cook all day and then tah dah! Soup for the next three/four days :lol:

Being vegetarian in Japan, I cook a lot. There's meat and fish in just about everything here. And many of the ingredients and equipment that vegetarians in other countries take for granted aren't available here, so I have to improvise and invent. This dish is an expensive treat for me (the porcini costs 700 yen) but I think people in other countries can probably make it cheaply.

Pasta with porcini and mixed mushroom gravy
(Vegetarian; can easily be vegan)

(This is probably enough to feed 3 or 4 if you add bread and a salad.)

* A few cloves of garlic, sliced
* 200~300 g of whatever mushrooms are handy, sliced. I like shiitake and maitake because they're easily available and relatively cheap in Japan, but button mushrooms and portobello would probably be fine too.
* 20 g dried porcini (soak in hot water while chopping the other ingredients)
* Butter (or olive oil)
* Spices: salt, pepper, sage, thyme, freshly crushed rosemary, parsley
* Vermouth (or white wine)
* Flour
* 300 g pasta -- spirals, bow ties, whatever's crinkly and cheap

Saute the garlic in butter/olive oil until the flavor has changed from spicy to nutty. Add mushrooms and saute more. Remove the porcini, chop, and add to mix. Add a splash of vermouth and simmer for a couple of minutes to let the alcohol cook off. Then add the porcini water (leaving out the dregs at the bottom). Add spices to taste. Add flour slowly until the sauce thickens; start cooking the pasta. Let the sauce simmer slowly while the pasta cooks. Drain pasta and toss into the sauce. Enjoy!

This mushroom gravy is also good over mashed potatoes and other side dishes. ^_^

What pastry dishes do you usually make?

The best thing I could probably make is a fridge cake a la lady_toast, hahaha. I just dish out condensed milk, marshmallows and coffee [you have to make coffee here!], mix them in a bowl, pour them on one layer of graham crackers, put more layers and pour the mixture again, freeze it for 2 hours or so... and voila. Hahaha. XD

But seriously speaking, I can only cook instant noodles. Boo. Which is why my family would never allow me to live in a dormitory. :(

We made deep-fried cookies once, lemme see if I could still find the recipe.

^ All these recipes sound SO delicious! And Akako, that actually sounds pretty good (though I don't eat red meat, so I'd use faux-meat)!!

And here's another dessert recipe! This time it's for black bottom cupcakes. I'm not sure if these are called by a different name in other countries, so here's a picture:

Here is the recipe in both US and Metric measurements (I apologize that the cookie recipe I posted did not include metric measurements. They were not given)

Black Bottom Cupcakes:

*metric*
* 224 g cream cheese, softened
* 1 egg
* 65 g white sugar
* 0.8 g salt
* 200 g miniature semisweet chocolate chips
* 190 g all-purpose flour
* 200 g white sugar
* 20 g unsweetened cocoa powder
* 5 g baking soda
* 3 g salt
* 235 ml water
* 80 ml vegetable oil
* 15 ml cider vinegar
* 5 ml vanilla extract

*NOTE: The directions were given with US measurements for both metric and US recipes.*

1. Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups or lightly spray with non-stick cooking spray.
2. In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.
3. In a large bowl, mix together the flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt. Make a well in the center and add the water, oil, vinegar and vanilla. Stir together until well blended. Fill muffin tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.
4. Bake in preheated oven for 25 to 30 minutes.

Me and my 5 roommates cooked like madmen and made all sorts of actually awesome things out of that old Betty Crocker cookbook (the one with the red picnic-tablecloth pattern!), but when you were pressed for time and money and Safeway was offering a killer deal on canned stuff every day of the week, that book got us all through feelings of inadequacy.


Also, no one actually makes tofu.

You know, that cookbook sounds awesome. I'm not a guy, but I would still get that cookbook and try out the recipes. I love cooking, but unfortunately, I am usually pressed for time and money! Thanks for the recommendation!! ::squee::

If you're a fan of tomatoes, I have a pretty good recipe for stewed tomatoes and tofu. It takes a bit of time to make, but it also freezes and reheats well, so it's worth it.

I usually cook mine on the stovetop, too. I just really want a rice cooker *laughs*

Also, burnt rice is horribly disgusting. As is undercooked, crunchy rice. BLECH! ::zetsubou::

I've got one and it's very convenient - you just put the rice in with water and leave it, and you can leave it for up to 12 hours after it's done.

And speaking of rice, allow me to add a plug for:
